preheat oven 300
In large oven safe skillet, cook bacon and remove to plate to chop when cool. Add butter and oil if needed to cook leeks until wilts, 2 minutes. Season with salt, add apple and ginger. Stir.
Increase heat to med. and add cabbage and cook stirring until wilts and looks glossy, 6 minutes. Add vinegar, syrup and bacon pieces. Cover and cook 1 hour in oven, stirring every 20 minutes
