Suggest a better descriptionHeat the oil in a medium saucepan over high heat. Add the onion and cook until soft, 3 to 4 minutes. Add the garlic and cook for 30 seconds. Add the ancho powder and cook for 30 seconds more. Add the stock and chiles, bring to a boil, and cook until reduced by half and the chiles are softened, 15 to 20 minutes.
Transfer to a food processor and process until smooth. Strain into a bowl.
Melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Whisk in the sauce and thyme, bring to a boil and cook, stirring occasionally, until thickened to a sauce consistency, 5 to 7 minutes. Stir in the honey and season with salt and pepper.
