Weight Watchers vegetarian curry
cook onion and garlic until soft, add curry powder. Cook out
Add aubergine, lentils, salt and stock. Simmer for 30 minutes. Stir regularly.
Once lentils are cooked through (tender and mushy) add the coconut milk and coriander. Mix well heat and serve.
katk2 1y agoAbsolutely delicious. Just made it and I love it! Will go perfectly with red rice. Tomorrow's lunch sorted.

gocit 6y agoI added two peeled tomatoes and a little extra curry and increased the amount of stock. My wife is not a avid eater of eggplant but she said this is her new favorite soup. Thank You,
