Lentils are a great choice as they low in fat, and in calories and free from cholesterol.
Warm 2 tablespoons oil in soup pan over medium heat. Sauté carrot, leek, onion and garlic, 5 minutes. Chop tomatoes, and add along with cumin and amchur powder, cook 3 minutes. Add vegetable stock, simmer 20 minutes. Sauté sage leaves in 1 tablespoon oil until, about 30 seconds or until crispy. Puree soup in food processor or with hand-held blender. Serve with crispy sage leaves and optional—a dollop of yogurt.
