Red pepper, pear and parsnip soup which can be served hot or cold.
Melt butter in a stock pot, add onion, garlic, red pepper and pears, cook until onion and peppers are soft. Stir in parsnips. Pour in stock, simmer until tender. Purée in batches in blender until smooth.
