1. Sift flour, cocoa powder, sugar, salt into the mixing bowl. Put butter and eggs. Mix with mixer start low then medium speed for about 1 minutes.
2. In a small cup of buttermilk, add the color paste and vanilla extract and stir them. Pour all of them into the batter (1). Mix on high speed then reduce to steady slow speed. Batter color shall be red.
3. Put the vinegar in a small plate then add the bicarb soda. It will create a reaction. Then shake a little bit until mix, directly pour into the batter. Stir the last with hand not to overmix the batter.
4. Preheat the oven in 170 degrees Celsius.
5. Scoop the batter into the muffin vorm with ice cream scoop. Then bake it for 23 minutes. After it is baked, let it cool down.
6. The frosting: beat cream cheese with hand mixer until soft. Then add vanilla extract and sugar. Beat them to mix together. Then add the cold heavy cream gradually while mix the frosting batter until nice and thick.
7. Put the frosting into the piping bag and then pipe them on the cupcakes.
