This is a great side dish with any fresh fish especially in the summer.
In rice cooker or pot combine all ingredients except cilantro and allow the rice to cook completely.
After the rice is cooked while still warm and fresh cilantro and combine well.
If you would like to make a larger batch add 1 teaspoon lime juice for ever 1/2 Cup of rice.

ReverendKen 2y agoI added a little sweet onion to it for my tastes but it was good with fish tacos and such. Rev. Ken James Gertner
LavenderWand 2y agoDO NOT USE A TABLESPOON OF SALT IN THIS RECIPE. It will make this dish inedible.

sHellsKitchen 3y agoThese measurements look off? Most recipes call for 2 cups of water to 1 cup of rice. Also the oil/salt quantities look flipped: 1 Tbsp oil and 1/2 tsp salt seems more appropriate. With these adjustments this recipe turned out awesome!
