Homemade potato rolls from the kitchen of Sandra Richards.
1. Wash, slice and boil potatoes until tender. Drain and save reserving water. Mash potatoes. (Can do this step 1-2 days in advance)
2. In a custard cup, dissolve 1/4 cup warm water and yeast.
3. In a large bowl, mix potato water, sugar, salt and yeast mixture.
4. Add shortening and eggs. Mix.
5. Add lukewarm mashed potatoes and gradually add 1 cup flour.
6. Mix thoroughly with a spoon and slowly add a cup of flour one at a time. Mix well.
7. Reserve the last cup of flour to be kneaded by hand into dough.
8. When the dough forms into a ball, turn dough out onto flour surface and knead for 5-10 minutes.
9. Place into lightly greased bowl to rise. Cover. ( Can refrigerate overnight or keep out if making same day)
10. Punch down and allow to rise a second time.
11. About 2 hours before baking, punch down and shape dough into desired rolls. (Grease hands with oil to prevent sticking)
12. Cover baking sheets with rolls and let rise until double in size (Needs to be I warm but not hot environment).
13. Bake at 400 F (204 C) for 12-15 minutes.
14. Butter tops of each roll after baking to preserve a soft crust.
Don't overbake. Use parchment or wax paper to put rolls of for rising to make transition to baking sheets easier. Needs to be in sun and/or warm for rising. If you push if very into roll and it leaves an indention, it's ready to cook.
