Put the first 3 dry ingredients in a mixing bowl.
Mix the next 4 liquid ingredients together in a measuring cup.
Make a well in the center of the dry ingredients.
Put the shortening in the well of dry ingredients.
Slowly pour a little of the liquid mixture into the mixing bowl.
Turn mixer on low and start to beat.
Continue to slowly add all of the liquids into the mixing bowl.
The inside of the bowl (including the bottom) must be scraped 2 or 3 times during mixing. Damp sugar sticks to the bowl and must be scraped off while mixing. If the damp sugar is not scraped off the inside of the bowl there will be lumps of damp sugar in your icing and this will cause your tips to stop up while decorating. There is not a certain amount of time to beat the icing. The main thing is to have a smooth and creamy icing.
Store icing in an air tight container.
This icing will keep 9 months to 1 year stored at room temperature.
Icing may be refrigerated or frozen but must be room temperature to use.
Only icing made with solid white shortening is allowed to be used for class. If you do not have solid white shortening on hand please do not bring icing made with butter shortening or with butter.
