Like minestrone but contains beans instead of pasta
Heat oil in heavy pan. Add onions, carrots, garlic, celery and fennel. Cook over low heat for 10 mins stirring frequently.
Add the zuchini slices and cook, stirring for 2mins.
Add chopped tomatoes, pesto, vegetable stock, beans. Bring to boil, reduce heat, cover and simmer for25 minutes until all vegetables are tender.Season to taste.
To serve: cook spinach in oil for 2 mins or until wilted.Spoon over the bread in soup bowls, then ladle the soup over spinach.
Serve with extra Evoo drizzlingon soup and sprinkle parmesan cheese.
