deceptively awesome
1. Combine chicken broth and water in bowl. Microwave on high 3 minutes, or until warm.
2. Meanwhile, chop onion. Place rice and onion in bowl. Drizzle with oil; stir until rice is coated. MIcrowave 4 minutes, stirring well after 2 minutes.
3. Gradually stir warm broth ino rice mixture. Microwave uncovered 10 minutes. Stir. Continue to mircrowave for 8-11 minutes or until most of the liquid is absorbed.
4. Meanwhile, dice ham, thaw peas in colander (rinse under cold water), grate parmesean cheese, and snip parsley.
5. Stir ham into rice mixture. Cover loosley with foil and let stand 5 minutes to allow rice to absorb remaining liquid. Stir in peas, 1/2 of cheese and parsley.
6. Garnish servings with remaining cheese, parsley, and ground pepper.
