2. Heat the oil in a frying pan and cook the chicken for 8 - 10 min, browning it all over
3. Transfer to roasting tin and toss with the fennel, garlic, lemon rind and juice and black pepper & salt
4. Roast for 30 - 35 min until the chicken is cooked and the fennel is starting to brown around the edges
5. Serve with Veggies
