Preheat oven to 180 C.
Mix oil, vinegar, thyme & lemon rind in a bowl & season to taste.
Layer onion slices on oven trays lined with baking paper.
Drizzle over half the oil mixture & roast 20-25 min until very tender and lightly browned.
Roll out pastry to 5 mm thick and cut out 25 cm diameter circle.
Place on oven tray lined with baking paper & refrigerate 30 min.
Score a 1 cm border partway through pastry and prick inside border with a fork and brush edges with eggwash.
Spread goats cheese within border, arrange roast onions on top.
Bake 25-30 min until pastry is risen, golden & cooked through.
Drizzle over remaining oil mixture to serve.
