Suggest a better descriptionPreheat oven to 400.
Line roasting pan with aluminum foil.
Place beets in pan.
Rub oil over beets, sprinkle with salt.
Cover beets with another sheet of foil and roast for 1-2 hours (test with fork - done when it goes in easily).
Remove from oven and let cool (but should still be warm) while preparing glaze.
In small, shallow saute pan, add vinegar and sugar.
Heat on high until syrup consistency, then remove.
Peel beet skins and cut beets into bite-sized pieces.
Pour glaze over beets. Add salt, pepper and orange zest to taste.
