Suggest a better descriptionIn a large stockpot, heat butter until very hot. Add onion and garlic and saute until you can smell aroma. Coarsely chop the roasted shallots and add to pan. Add rice and mix well to coat the grains. Saute the rice for a few moments.
Add about 2 cups of the stock and stir over medium heat. Stir often while the rice is cooking. Once the stock has been absorbed, add more stock and continue the process until the rice is cooked al dente. Add thyme and about 1/3 cup of the Parmesan cheese, season with salt and black pepper. Top each plate of risotto with some of the remaining Parmesan cheese.
Risotto is a very popular dish, but people are often afraid to prepare it at home because it has the mystique of being very difficult to master. As long as you follow a few simple steps (toasting the rice, keeping the stock hot, and stirring), you can master the technique and create all types of exciting risotto dishes.
