These sweet potato wedges have a little kick and are great to serve on the side of sandwiches, porkchops and many dishes with a Caribbean flair.
Preheat oven to 425 deg F. Cut each sweet potato in half lengthwise; cut each half lengthwise into 6 wedges. Combine sweet potatoes, olive oil, salt, cumin, and red pepper in a bowl; toss gently to coat. Place wedges on a baking sheet; bake at 425 deg for 25 minutes or until tender.
