This is a quick and easy recipe for leftover pork
Cut pork in chicken nugget sized pieces and set aside. Beat eggs in a medium sized mixing bowl. I put the eggs in a gallon sized baggie but either way works. Put bread crumbs in a medium sized mixing bowl or a gallon sized baggie. Heat oil over medium heat, dip pork nuggets in egg mixture and then the bread crumbs until completely coated. Place in hot oil and fry until golden brown on all sides. Drain on paper towel before serving. If you use baggies for your egg and bread crumbs then you can coat all the pork at the same time. I serve this with mashed potatoes and gravy.
Make sure your oil is at frying temp before starting.
