A fairly quick and easy recipe for perfect lamb.
Set your meat out and let it come to room temperature while heating your oven to 250 degrees. Afterwards, rub in a mix of salt, pepper, and rosemary. Sear on both sides (max heat, 45 sec to 1 min on each side) Coat with a vinaigrette (For this recipe, my favorite is Newman's Own: Raspberry Walnut). Let sit for 20 min or more. Add more seasoning if desired. Place the lamb on a baking rack over a cooking tray/pan and bake for 1 - 1 1/2 hrs.
