Add confecitoner's sugar gradually and mix on low speed until incorporated and mixture is shiny. Turn speed on hight and beat until mixture forms stiff, glossy peaks - approximately 5-7 minutes.
Once icing is ready, divide into bowls and add food coloring, if desired.
