It doesn't get any easier than this!!
Mix the ingredients in a medium sized bowl, mixing the tarragon with the turkey pieces before adding the mayonnaise. Mix well and refrigerate, covered, for 1-2 hours to allow the flavors to mix. Serve in a quartered tomato on lettuce or on your favorite sandwich bread.
Perdue Carved Oven Roasted Chicken may be substituted for the turkey. Hellmans Mayonnaise may be substituted for Dukes. Adjust the amount of mayonnaise and tarragon to taste. I haven't found a brand of cooked poultry products that taste as great as Perdue's.
