A tasty chicken recipe with an island flare. The sweet mixture of rum, juice and brown sugar with a little spice from crushed red pepper, garlic, onion and vinegar make for a nice contrast. This is also a great dish for people on a low carb diet.
1. Add olive oil and sesame oil to a large frying pan and turn to medium heat.
2. Cut the chicken thighs and onion into bite size cubes and add to the pan. Lightly brown the chicken. ( it does not need to completely cook at this point )
3. Put all remaining ingredients except for the corn starch into a large mixing bowl, and mix well.
4. Add the contents of the mixing bowl into the pan with the chicken, turn the burner to high and bring to a boil.
5. After it boils, reduce the heat to low, and let cook for approximately 10 minutes or until the chicken is completely cooked.
6. Remove from heat, and add the corn starch. Mix well and let the sauce thicken for a few minutes.
If you don't have Splenda brown sugar, you can use regular brown sugar, but it will increase the calories and carbs. Serve as is, on top of rice, or with Asian stir fried vegetables.
You can use chicken breast if you prefer. For extra zing, increase the crushed red pepper. If you prefer to not use rum, increase the apple juice by 1/4 cup.
