Preheat oven to 350 degrees. Combine first 6 ingredients in a roasting pan with lid. Be sure to coat chicken thoroughly. Bake for 1 1/2 hours or until chicken is really tender. Remove lid and bake for another 1/2 hour to thicken and caramelize sauce to the chicken. Portion rice onto plates; spoon some of the sauce onto the rice; place chicken on top. Garnish with chopped fresh cilantro.

Boomerman 4 years agoIf you remove the skin the meat will fall off the bone. I use a combination of legs and thighs. Don't add any salt; the onion soup powder will make it salty enough. When you remove the lid turn all thighs (if using) 'top side' up to caramelize. [I posted this recipe.]
