For the Pastry Dough
Combine flour, sugar and salt. Using your fingers, quickly break up the butter, tossing it in the flour mixture, until the butter is roughly the size of peas.
Add water 1 tablespoon at a time, tossing together with a fork, until the dough sticks together to form a ball. (The amount of water needed depends on the humidity in your area. Just make sure it sticks together easily without being sticky to the touch.)
You can now roll this delicious looking dough out onto a parchment paper(lightly floured) into a 14 inch circle. You can now transfer the whole dough and parchment onto the baking sheet.
Mix together all the filling ingredients until it been evenly coated.
Pour it all onto the centre of the tart and spread out to within 2 inches of the edge. Make sure you fold up the edges. This will make the filling kept snuggly inside.
You can now brush the pastry with egg wash and sprinkle it lightly with sugar.
Bake the Rustic Cherry Tart at 375ºF for about 60 minutes. Allow it to cool down.
You can now slice it up and serve.
