Salad - Orzo, Feta and Spinach

Original recipe from Simply Recipes:


1 package Orzo; uncooked
10 ounce Spinach; chopped fine
1/2 lb Feta cheese; crumbled
1/2 ea Red onion; chopped
3/4 cup Pine nuts
1/2 teaspoon Basil
1/2 cup Olive oil
1/2 cup Balsamic vinegar

Original recipe makes 4 Servings



Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.

Transfer to a large bowl and stir in spinach, feta, onion, pine nuts and basil. Toss with olive oil and balsamic vinegar. Chill overnight and serve cold.

Optional: Add Kalamata Greek olives pitted, roughly chopped, about 1/2 cup (about 20 olives)

Optional: Add halved cherry tomatoes.

Optional: Puree the spinach, olive oil, onion, feta, pine nuts and olives, then add to the orzo.

I really liked this salad. Orzo is such a great texture. I think olives, as suggested, would really give the flavor a boost, but it was fine without.

My family enjoyed this one very much. I didn't have enough feta and spinach in the packages that I purchased and wished I would have had enough. It is very simple and worth trying if you like to experiment. Went very well with the "Crockpot Brown Sugar and Balsamic Glazed Pork Loin" and "Roasted Califlower." - Which are both on Big Oven
