Original recipe from Simply Recipes: http://www.simplyrecipes.com/recipes/spinach_and_orzo_salad/

"My family enjoyed this one very much. I didn't have enough feta and spinach in the packages that I purchased and wished I would have had enough. It is very simple and worth trying if you like to experiment. Went very well with the "Crockpot Brown Sugar and Balsamic Glazed Pork Loin" and "Roasted Califlower." - Which are both on Big Oven"

Ingredients

1 package Orzo; uncooked
10 ounce Spinach; chopped fine
1/2 lb Feta cheese; crumbled
1/2 ea Red onion; chopped
3/4 cup Pine nuts
1/2 teaspoon Basil
1/2 cup Olive oil
1/2 cup Balsamic vinegar

I really liked this salad. Orzo is such a great texture. I think olives, as suggested, would really give the flavor a boost, but it was fine without.
