Mix dressing: Whisk olive oil, orange juice, vinegar, dijon and salt.
Layer it Up: Spoon 1-2 tbsp of dressing into jar. Add mushrooms, quinoa, asparagus, chicken or tofu, tomatoes, peppers. Top with mâche or lettuce.
Store in fridge for a few days. Good way to plan healthy meals.
