Salmon in a puff pastry stuffed with rice, spinach and egg.
For the Pastry:
In a large bowl, combine flour and salt. Cut in shortening until mixture is crumbly. Gradually add water, gently tossing, then pressing ingredients together to form a ball. Wrap in plastic wrap and chill for at least 30 minutes.
Prepare the salmon by removing the skin and any bones, then set aside.
For the Filling:
Saute the onion in the butter until translucent.
Combine the spinach, hard-boiled egg, white fish, sauteed onion, wild rice, Bechamel sauce, dill, thyme and lemon zest. Mix lightly and season to taste with salt and pepper. Set aside.
Roll out the pastry so that it is twice the length of the salmon fillet plus 2 inches, and 2 inches wider than the fillet. Pastry thickness should be 3/16 inch thick.
Spread a layer of the spinach mixture in the middle of the pastry. Place the salmon fillet on the spinach and then spread another layer of the spinach mixture over the salmon. Beat together the egg and water. Fold the pastry over the filling and seal it with the egg wash. Turn it so that the seam side is down.
Place on a greased cookie sheet and bake at 350 degrees for 30 to 45 minutes or until brown. The internal temperature of the salmon should be 130 degrees when done (can test it with meat thermometer).
Slice 1 inch thick and serve with Hollandaise sauce.
