1 can Salmon
1 Egg
1/2 cup Italian bread crumbs
1/2 teaspoon Salt
1/2 teaspoon Pepper
1 Onion; diced
1/2 cup olive oil

Original recipe makes 1



Cover the bottom of a skillet with olive oil.

Remove skin and bones from salmon; drain well. In mixing bowl, combine salmon with egg, bread crumbs, salt, pepper, and onion. Make patties about 2 inches in diameter; fry in oil until brown on both sides about 10 minutes.

Sprinkle salmon patties with salt.

Perfect! For those who don't have bread crumbs on hand, crushed saltine crackers are a good substitute.

Very quick recipe, just what I was looking for, and very easy to double. I subbed dried onion for the fresh chopped because I was running out of time, and I added just a splash of milk to account for them (it was pretty dry when I mixed it all up due to the dried onion). They all cooked up great! I'll never make them as good as my husbands grandmother did, but I'm pretty sure she adjusted her recipe based on humidity, temperature and wind speed that day, also her awesome cast iron skillet. These are close, and very good.

These patties were so easy and tasty! I followed the recipe exactly for our first batch then had to make more cause the kids devoured them. I didn't have breadcrumbs for the 2nd batch so I used a box of coating for baking chicken, House Autry brand purchased at W.Mart. Worked great.
