Salmon with Tarragon Butter
butter:
Combine all ingredients thoroughly.
Form into log shape, wrap and refrigerate at least 30 minutes.
Store up to 3 days.
salmon:
Arrange salmon in oiled roasting pan.
Coat with olive oil, season inside and outside with salt and pepper.
Place tarragon inside the salmon, then top tomatoes and onion.
Roast 450 for 20-25 minutes or salmon flakes easily with fork.
