Delicious cheese dip
Remove any rind from cheeses and cut into rough 1 inch cubes. Pulse the cheeses in a food processor until fine, pea-sized gravel. Transfer the cheeses into a bowl and stir in green onion and garlic.
Add the oregano, rubbing it between fingers to release its fragrance. Add the black pepper, red pepper flakes and olive oil until all combines well (amount of olive oil will depend on the dryness of the cheeses).
Cover and let stand at room temperature for at least 4 hours before serving. Keeps for up to one month in refrigerator.
