Heat a large pan or wok on high with peanut oil.
Stir Fry the mince and onion approx 5 mins breaking up the mince.
Add chestnuts, hoisin, soy and oyster sauce, garlic and ginger, splash of sesame oil, sugar, chilli and spring onions stir frying until all incorporated.
Take apart whole lettuce leaves carefully, and fill each cup with mixture.
