Top with cheese and remove from heat. Let stand, covered, for 5 minutes or until cheese is melted.
Boneless skinless chickedn thighs can be substituted. If the beans are rinsed, add 1/2 cup reduced-sodium chicken broth with the salsa and rinsed beans.
