In a small bowl, beat together the egg and milk.
On a cutting board, roll out the pastry dough. Brush lightly with egg mixture, sprinkle with parmesan cheese, and cut each sheet into 3 long strips.
Divide the uncooked sausage into 6 equal portions, rolling each into a log the same length as the pastry strips. Place one sausage log in the middle of each pastry strip and wrap the pastry around the sausage, pinching the edges together to seal. Brush the tops of the pastry with the remaining egg mixture. Chill for 15 minutes.
Line a baking sheet with parchment or a piece of brown paper bag (to absorb the fat from the sausage).
Cut each pastry roll into 1" slices and place on the baking sheet. Bake for 15-20 minutes or until sausage is full-cooked and pastry is golden brown.
