Very easy to make and delicious for a quick meal!
Fry chopped onion and garlic in olive oil, then add sausage and cook until browned. At the same time boil noodles to al dente, then drain. Add spinach, mushroom pieces, chicken broth, tomato sauce, and dry seasonings to browned meat and cook for 5 minutes. Combine mixture with noodles and boil on high heat for a couple of minutes to evaporate some of the liquid. Stir in 1-2 cups shredded Italian cheese just before serving. Optional: Serve with grated parmesan cheese to taste.
If you use Ground Beef instead of Italian Sausage, you will want to add more Italian seasoning to the meat mixture during cooking.
