Suggest a better descriptionDice the strips of bacon into 1/4 inch pieces. You want to get the bacon nice and crispy (low-medium heat) once it is cooked remove it from the pan leaving the bacon fat, it will be the fat used for the roux. Take the italian sausage and remove from the casing allowing you to put the just the ground meat in the pan. You want to get the sausage completely cooked and then you put your cooked bacon back in the pan and add your minced garlic.
The moment you smell the garlic starting to cook (the smell changes from when its raw) you want to add in the flour. Do not put it all in because you may not need it, simply enough to fully absorb all the fat in your bacon and sausage mixture.
Once the flour is mixed thoroughly and it has begun to cook down you want to add the 1/2 & 1/2. Once you get the cream and flour fully incorporated and its begun to thicken up you add as much milk as needed to have the quantity that you want. You want to allow for it to cook down a bit more to return it to the consistency that you want. Keep stirring so it does not burn.
At this point its ready when it no longer has a floury taste (if it does you can turn to low heat and continue adding more milk and letting it cook down stirring periodically until the flour taste is gone and it is thick and creamy)
Add the black pepper and salt to taste (with the bacon and sausage you may not need salt)
A few shakes of tabasco to give it some spice and its ready
Great with buttery biscuits split in half and smothered on top. Its nice to have a fried egg between the biscuit and the gravy.
