Suggest a better descriptionGrease 9" pie pan. Saute sausage until brown and crumble. Remove from pan and drain.
In same pan, saute onions and pepper until soft. Salt and pepper shredded potatoes and press in bottom and sides of pie pan to form a crust. Sprinkle potatoes with half the cheese.
Combine sausage, onions, and peppers and place in pie pan. Sprinkle with the rest of the cheese.
Salt and pepper eggs and beat well. Pour into pie with rest of ingredients.
Bake at 425 degrees for 45 min to an hour. If top starts to brown too fast, cover loosely with tin foil. Quiche is done with knife inserted close to center comes out clean.
