In large skillet, fry pancetta over medium heat until crisp. Drain any excess fat. Add kale and white wine, sautéing until the kale is wilted. Season to taste with salt and pepper, keeping in mind that pancetta is often salty. Top with toasted pine nuts. Refrigerate any leftovers.
