Simple but Delicious!
Heat oil in a large skillet over medium heat. Add garlic and ginger and cook for one minute. Add bok choy and soy sauce and cook for 3 to 4 minutes, until greens are wilted and stalks are crisp tender. Season to taste with salt & pepper. Serve immediately.
Eliminate the soy sauce for a different taste. One to two teaspoons of ground ginger may be substituted for fresh ginger, but the flavor will be different.
