This spinach is lovely with fish and chicken.


1 package baby spinach; prewashed
1 tbsp extra virgin olive oil
2 cloves Garlic; minced
0.25 cup pine nuts; toasted
1 Salt to taste

Original recipe makes 2 Servings



In a small skillet, toast pine nuts until slightly browned. Set aside.

In a large skilled, heat olive oil. Add garlic, and saute until tender, but not browned.

Add spinach, and saute until wilted. Do not overcook.

Add pine nuts and salt if needed. Serve immediately.

Added a few small sweet bell peppers and a shallot. Spinach is always yummy to me. My daughter didn't like it though...she said it tasted bitter.
