Simple recipe for tender greens such as spinach, beet greens, swiss chard, and beet berry. If the greens have tough stalks, remove them first. You can serve the dish with lemon wedges on the side.
Prepare the greens so that they remain slightly moist.
Heat the oil and garlic in a deep pot over medium high heat until the garlic becomes translucent and fragrant, 1 - 2 min.
Add the greens, cover, and cook, stirring occasionally until the greens completely wilt, 2 - 3 min.
Uncover and season with salt and pepper to taste.
Raise the heat to high and cook until any remaining liquid evaporates.
Adjust seasoning with fresh lemon juice and extra virgin olive oil to taste.
Serve immediately
