Beat the first five ingredients with an electric mixer until well
combined. Mix in the pecans. Divide the dough into thirds. Form each
into a smooth 1-1/2" diameter log on a sheet of waxed paper. Wrap
tightly. Refrigerate at least one hour to firm. (Can be prepared
ahead and refrigerated up to three days, or frozen several months.
Thaw in the refrigerator before continuing.) Preheat the oven to 325
F. Remove the paper from the dough. Cut the dough into 1/4" thick
slices. Arrange 1-1/2" apart on baking sheets. Bake until golden
brown, 15 to 18 minutes. Transfer to paper towels and cool
completely. Store in an airtight container.
