Stove Top Stuffing is appearing in breakfast.food! Make these the night before and just heat in a microwave for a hot breakfast!
1. Preheat oven to 400F.
2. Bring 1 1/2 C water & butter to a boil in a medium saucepan. Stir in stuffing mix. Cover and remove from heat, and let stand 5 minutes, fluff with a fork. Let stand, uncovered, 10 minutes or till cool enough to handle.
3. While stuffing cools, cook sausage in a small skillet over heat until brown, stir to crumble.
4. Coat fingers with cooking spray. Press about 1/4 C stuffing into bottom and up sides of each of 12 muffin cups heavily coated with cooking spray. Pour eggbeater evenly over stuffing filled cups. Layer cheese, sausage, bell pepper, onion evenly over egg. Add any other ingredients at this time, mushrooms, tomatoes, etc.
5. Bake for 18-20 minutes or until centers are set. Let stand 5 minutes before serving. Run a sharp knife around edges of muffin cups to loosen. Remove immediately from pan.
