A Childhood favorite
Make Cream sauce and set aside. Preheat oven to 375. Scrub potatoes and slice into 1/4 inch slices with food processor. Put them in a 2 qt soufle dish or an 8x8 in pan. Sprinkle with Ham in between each layer. Pour Cream sauce over potatoes and gently shake so that all the sauce will be evenly distributed. Bake on middle rack of oven for 1 hour or until bubbling, place under broiler for 2 minutes.
Cream Sauce - needs to be doubled
1/4 cup finely chopped yellow onion or shallot
2 Tbls oil
2 tbls oat flour
1-2 cups almond milk or chicken broth
1 bay leaf
1 teas dried thyme
1/16 teas nutmeg
salt and pepper to taste
IN a pan over medium heat add oil and onion until translucent, whisk in flour and cook 2 minutes. Quickly pour in almond milk, while whisking in the pot, bring to a boil and whisk until it is very smooth and thick. Add bay leaf, nutmeg and salt and pepper. Turn down heat and simmer, cook for 5 minutes. If to thick add more milk or stock.
