A hearty main course that tastes great.

"I used leftover spiral cut ham, not cubed as that is what we had on hand. Also added a handful of shredded cheddar. It was SOOO good that we made it again 2 days later without the ham. This also inspired us to purchase a new food processor to slice the potatoes quickly, :-)"

Ingredients

2 cups Cooked ham; cubed
1/4 cup Onion; chopped fine
1/4 cup Butter or margarine
1/4 cup Flour
2 1/2 cups Milk
5 large Potatoes; thinly sliced
1 1/2 teaspoons Salt
1/8 teaspoon Pepper

Preparation

To make sauce, cook onion in butter or margarine till tender but not brown. Stir in flour, 1 1/2 teaspoons of salt, and 1/8 teaspoon pepper. Add milk. Cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more.

In a 2 quart casserole place 1/2 of the cubed ham and half of the sliced potatoes. Cover with half the sauce. Repeat layers. Bake covered in 350 F oven for 45 minutes. Uncover and bake 30 minutes more or untill potatoes are done.

I love this as a basic scalloped potatoes recipe. I omit the ham and add extra potatoes and onions. Also add garlic and definitely rosemary. Absolutely everyone loves it when made like that! Cheese on top optional but not necessary
