2. Heat half the butter in a heavy saucepan and cook shallots until they are golden and beginning to soften
3. Add stock and salt, simmer until there is only a tablespoon or two of stock left, occasionally turning the shallots
4. Add the wine, simmer again until shallots are soft, then remove shallots
5. Add rest of butter, reduce till sauce is thick
6. Pour sauce over shallots
