Kids love this meatloaf and they get some vege's.
Preheat oven to 350
In large bowl, mix all meatloaf ingredients, except for 1/4 cup of peas and carrots and mashed potatoes.
Put in meatloaf pan
Bake 40 minutes
Increase oven temp to 400
Remove meatloaf from oven and top with mashed potatoes, spreading out with a spatula to seal edges
Sprinkle with remaining 1/4 cup of peas and carrots
Return to oven and bake 20 more minutes
Remove from oven and transfer to platter and let cool for 10 minutes before serving
