Heat a large pot of water to cook noodles. Heat 1 tablespoon sesame oil in a skillet. Add tempeh; turn immediately to coat both sides with oil. Brown on both sides. Add tamari or soy sauce and 1/2 cup stock. Cover tightly and cook until liquid is absorbed, turning tempeh once or twice, about 5 minutes. Remove tempeh from heat and cut into strips about 1/4 inch thick and 1 inch long.
Combine cornstarch and warm water in a small bowl. Set aside several minutes until cornstarch has dissolved. Add 2 tablespoons stock and 1 generous tablespoon miso; whisk until smooth.
Heat remaining tablespoon of sesame oil in a large skillet. Add sliced mushrooms, carrot, and garlic; saute 2 to 3 minutes. Stir in ginger, cabbage, and green onions; saute 1 more minute. Add tempeh strips, remaining 1/2 cup stock, sherry, and cayenne; cover and steam about 2 minutes. Stir in cornstarch-miso mixture; cook briefly until thickened. Taste and add more miso mixed with a little stock, or add soy sauce to taste.
Stir soba noodles into rapidly boiling water and bring back to a boil. Add 1 cup cold water, then bring back to a boil. Repeat until noodles are tender. (This ensures even cooking; alternatively, boil until tender or follow package directions.) Drain thoroughly and toss with roasted sesame oil. Serve immediately, topped with stir-fried vegetable mixture. Serves 4.
