Quick and easy! Rice flour makes it crunchy, substituting cornflour would make it more melt in the mouth
Heat oven to 170*c
Beat the butter and sugar until light and fluffy
Add the flour gradually mixing briefly between each addition
Gently knead until smooth. Do not overwork
Wrap and chill for 30 mins
Roll out to 5-6 MM. and cut with your favourite cookie cutter
Bake on 2 lined baking sheets for 15-20 mins then sprinkle with sugar
Leave to Coll for 10 minutes on the sheet before transferring to a cooling rack
