Inspiration for this recipe, which I've refined over the years, were two gigantic fresh lemons I brought home with me from Sorrento, Italy. Ciao!
I dice and chop all ingredients ahead of time to make combining them easier.
1) Season both sides of chicken breasts (cut into tenders) or chicken tenders with lemon pepper seasoning.
2) Heat oil and butter in large skillet over medium heat then place seasoned chicken in skillet. Cook until lightly browned on that side then placed diced onions and garlic on top of them. Turn chicken pieces over, making sure the onion and garlic bits are browning as well.
3) Once the chicken is lightly browned and cooked throughout, move them onto a plate to cool. (approximately 5 minutes each side)
4) Pour chicken broth into pan and stir to loosen garlic, onion and roasted bits of chicken together. Cover and let simmer on low heat for 15 minutes, stirring occasionally. Once you can handle the cooled chicken, shred into bite size pieces.
5) Add the sliced mushrooms, lemon juice and shredded chicken to the simmering broth, stir then let simmer on low heat for 15 minutes, stirring occasionally.
6) Pour jar of Chicken gravy into the mixture, stir and heat another 5 minutes or until mushrooms are tender.
7) Serve over your favorite pasta, top with freshly chopped parsley, if you have it, and enjoy!
