Yummy Shrimp and creamy !
In a large stockpot, cook the chopped bacon over medium heat until brown and crispy. Remove bacon and drain on a paper towel reserving the drippings in the pan. Add the onion, bell pepper and garlic to the bacon drippings and cook over medium heat until soft (about 5 minutes). Remove onion mixture with slotted spoon reserving the bacon drippings. Place the flour in a large zippered plastic bag and add the peeled shrimp and shake to coat. Remove the shrimp using your fingers and gently shake to remove excess flour. Add shrimp to the bacon drippings and cook for 5 minutes. Remove the shrimp and set aside. Return the onion mixture to the pan and add the chicken broth, Worcestershire sauce and lemon juice. Simmer uncovered for 20 minutes. Add the shrimp, thyme and parsley. Simmer uncovered stirring occasionally for 30 minutes or until sauce is thick and bubbly. Add salt, pepper and hotsauce to taste.
For the grits...
In a large saucepan, bring the chicken broth to a boil. Stir in the grits and reduce the heat to low. Cook while stirring constantly until thickened. Then cook an addtional 8 - 10 minutes stirring often. Slice the cream cheese and add to the grits stirring until cheese is melted and well blended. Add the Monterey Jack cheese and stir until blended.
Serve the Shrimp over the grits. Sprinkle with crumbled bacon and hot sauce. Serve immediately.
