Attractive and tasty variation on the traditional Shrimp Scampi.

"This was DELICIOUS! Instant replacement for my old scampi recipe.

I used white cooking wine in place of vermouth, and some finely diced red onion for scallions. Didn't have angel hair pasta either, but it was wonderful over some spinach flavored linguine.

I also added some diced cherry tomatoes for a garnish, and it was a beautiful presentation."

1 pound Shrimp; raw, peeled and deveined
2 tablespoon Butter
2 tablespoon olive oil
2 tablespoon Scallions; sliced
2 cloves Garlic; crushed
2 tablespoon Dry vermouth
2 tablespoon Cilantro; fresh chopped
1/2 Lemon; juice

Original recipe makes 2

Heat butter and olive oil in a large skillet. Add scallions, garlic, and shrimp. Saute until shrimp just turn pink. Add vermouth, cilantro, and lemon juice and heat through. Serve over angel hair pasta and top with freshly grated parmesan or romano cheese.

Nice variation on the traditional scampi.

I made this 3 nights ago and my husband loved it so much he asked for it again tonight! Great light, and summery shrimp pasta dish!!

I don't like shrimp so I actually substituted fake crab. Yum! I did add some salt and fresh cracked pepper also.

Oh my! This was sooo freaking good! Made it tonight for our Valentine's Day dinner and we cleared our plates! I sprinkled a little salt and pepper on the shrimp as they were cooking and used wine and lime juice :)

I added cut up parsley instead of cilantro and some red pepper.

Wow is this delicious! I encourage everyone who likes shrimp to try this. I started with precooked shrimp. One of the best dishes I've ever made.

Loved it!!! It's so creamy and yummy. And a little dash of pepper doesn't take away from the flavor.
